Incoming chef-in-residence, Carla Florim

Carla’s earliest memories of food are shaped by sun-drenched summers spent in her family’s gardens, picking peaches, plums, and figs—moments of sweetness marked by sticky fingers and a quiet sense of abundance. As a child, her tastes were both selective and sentimental: she avoided favas, which she now loves to cook, while fruit, stews, and her grandmother’s vermicelli pudding became lasting favourites. Caldo Verde, the classic Portuguese soup, remains a dish she returns to time and again.
